I remember I once had an Intel motherboard where the BIOS wouldn't boot a partition if it wasn't set to bootable. But as you say, the bootable flag was completely irrelevant to Linux to be sure. Just not the BIOS. Shouldn't be relevant on any hardware from this decade or the previous one.
