There are config files for mplayer; the Debian mplayer puts them in /etc/mplayer/mplayer.conf (for system global settings) and in ~/.mplayer/config. Whatever you can set in the command line option can go in that file, at least the man page says that :-) For more details check "man mplayer", look for the section "CONFIGURATION FILES".
