After reading some more it seems that setting 'use_envelope_from' would have been enough, as by default it uses the value of from if 'envelope_from_address' is not set. Thinking about it, it probably makes sense to have 'use_envelope_from' set by default. As to your original problem, my guess is that your ISP's or Debian's spamfilter will not let messages through if 'From' and 'Envelope-From' don't match.
