There is not much configuration to be done on the daemon side of esd. I believe that it will be started up automagically by the programs (i.e. xmms) which use it for output. So it's simply a matter of configuring the client applications.
I have no real experience with ogle, but your reasoning is correct. You have to kill esd before you want to run an application, which uses /dev/dsp directly.
And what are these 'streamer sinkers' of which you speak? Googling for 'gstreamer-sinker' and 'sink-esd' both come up empty.

By the way, where does an application like Macromedia Flash Plugin for Mozilla fit into this structure?
IIRC, it worked correctly with esd. However I don't use flash often, so I have no first-hand experience at the moment.
