Assuming you want 0.7.9 in squeeze, you could use fancy version numbers like 0.8.1really0.7.9-1 for 0.7.9 and 0.8.1really0.8.1-1 for 0.8.1. It's ugly, but unlike an epoch you don't have to carry it around forever and are done with it when 0.8.2 comes out.
