Paraview is really not an easy source to package. Now the debian-directory is rewritten almost completely to make the packaging as simple as possible. I prefer to escape "overpatching", because it complicates a maintainance.
I am afraid, that replacing the vtk is not an easy work. It can produce even more bugs and problems. For example, it was impossible to replace fltk and sqlite with packaged in debian variants [1], because, it seems, upstream uses another version of the source. Anyway, if somebody has a wish to try to do it, git-repo is open for everybody.
