I think AltiVec instructions can appear anywhere if you compile with
-maltivec, so I think the bug cannot be deferred to FFmpeg.

The alternatives you suggested are not very pretty, but I don't see a
good alternative.  I think the symlink approach is preferrable.

Unless of course you created two different packages, one with AltiVec
support and one without.
