I tried both cases and in both cases imapproxy failed to start.

I changed listen_port in /etc/imapproxy.conf and started a real IMAP
server.  Then imapproxy did start.

How about a debconf question to ask if imapproxy and the IMAP server
should run on the same system and then ask 

 - either a remote server+port
 - or a local port other than 143 ?
