I don't have the abiword/openoffice.org setup anymore, but I can try
again with jpeg files:

 1. Double click on a jpeg file in nautilus: eog opens to show it.
 2. Right click, Open with, gqview: gqview opens to show it.
 3. Double click on the file again: eog opens, so "open with" is not
    permanent.

I tried "open with another application" to see if it would allow to save
the preference:

 1. Right click, Open with another application, pick gqview: gqview
    opens.
 2. Double click on the file again: eog opens, so "open with another
    application" is not permanent.

During all the tries, I looked for a way to choose to always use the
chosen program to open the file, but I didn't find it.

I couldn't find a preferred application editor there, just something
(quite nice indeed) that looks into the registered mime handlers for a
file and allows me to pick one to open the file just once.

Another place I looked was in System/Preferences/Preferred applications,
but it only allows to change the web browser, mail client and X
terminal.
