Unfortunately there's no 'downgrade' command, so if you've already put some time in getting what you want, good luck. Remember that everything in Debian gets done by volunteers, so if you'd like to see more documentation (and I think it's sorely needed too), find a place to contribute! The best way, is to fill a hole: you find something that's not documented, or poorly documented (probably you needed the documentation yourself for what you were doing), and fill it in.
