understand why Grub couldn't properly register itself in UEFI -- it

This is a known issue, not specific to LVM; partman-efi should not allow to create an ESP where UEFI firmware cannot read it (LVM, crypto, most software RAID levels, partition tables other than DOS/MBR and GPT...).
A couple of years ago I submitted a bug report and a patch:

However it appeared later that some users create an ESP on RAID1 v1.0 which can be read as independent partitions by UEFI firmware. So maybe just warn the user is an option. It requires a new debconf template and will involve translation effort, so it I guess is too late for trixie.
