I'm not overly familiar with the nomenclature of large-displacement elasticity. But the matrix you compute does at least not look *obviously* symmetric to me.

If I see this right, you compute the integral

 \int_K   symm(grad phi_i * F_inv)
        * Jc
        *  symm(grad phi_j * F_inv)
        + similar terms with tau

Here, Jc seems like a symmetric tensor. Are you sure it's positive definite? For tau, is it symmetric? If tau is not symmetric, then your matrix is not going to be symmetric.
