Large text sizes make the interface feel cluttered and confusing, and possibly unusable
to the average photography enthusiast. I know some people who would freak out immediately

fairly good eyesight then a value of 8.0 is good and keeps the interface looking clean
and manageable (note: this seems to break the "Ascending/descending"
arrow/button/icon at the top of the lighttable screen).

Makes it possibly unusable for you, on your screen and system settings,
maybe. But such statement is wrong. darktable used on darktable theme
just system font. Nothing else. On elegant themes, it uses system font
size with Roboto fonts. So there you precise that default font (used all
other Gtk applications is bad. 8.0 on my system is just too small too
make the UI readable. And it's not a problem of having fairly good eyesight.
And since darktable 3.2.1, font size could be set by the user in
preferences. So no need to change that. But maybe change your screen/OS
settings?
To help those with eyesight trouble, a new 'T' button in the top corner of the
Lightroom might toggle between text sizes to '8.0', '9.0' and '10.0'. I can
produce the 'T' icon, if needed, you can show me where similar icons are, or
I'll follow the lead here:
