I submit a problem for which he has lost sleep without ever finding a valid
explanation, maybe you can help me understand if it is due to a bug, a
wrong setting or something else.
DarkTable when opening my shots reproduces .jpeg and .raf files in a
totally different way.

The "clearest" images refer to jpegs, these images are also identical to
how the camera shows them during shooting and preview.

Some thoughts:
1. With other software the difference that exists anyway, since we talk
about jpeg files already processed and compressed by the camera and
untreated raw files, is not so marked.
. The setting applied to the camera is minimal and the profile is the
Provia / Standard
. This behavior is present even if in a different way, even with shots
taken at ISO100 (ie without sensor amplification)
. Even using the Clut tables created to emulate the same effect (Provia /
Standard), the difference is huge, in fact with those it is not clear how
colors are changed, so they are simply useless.

I write to you because my goal is to get jpeg / raw (similar) files
considering the natural and physiological differences that pass between
these two output files.

Now if I start working on a .raf file, it's because I want to improve the
jpeg on camera for various reasons. Currently working on the .raf file I
have to work only to get similar results to the jpeg on camera, which makes
the work of developing the raw files useless.
