Well, leaving an unedited mess below your response forcing the user to scroll 
down hardly will make it easier to read posts. There's no inherent reason to 
"chopping the heck out the original post" just because you trim a bit so that's 
an irrelevant argument here.

I find that trimming improves the responses I write too as it gives focus. 
Focus being something a web experience designer should see the importance of.
