### Purpose of this pull request Part of #12809 Update the English and Chinese Copy transform documentation to follow the transform documentation template. ### What changed - Added engine support, an expanded description, and five-column options tables. - Documented `fields`, the deprecated `src_field` / `dest_field` pair, and multi-table options. - Explained per-table rule precedence and pass-through behavior. - Added matching English and Chinese multi-table examples with input and expected output. ### Source code checked - `CopyTransformConfig` - `CopyFieldTransformFactory#optionRule()` - `TransformCommonOptions` - `AbstractMultiCatalogTransform` ### How was this patch tested? I compared the documented option names, defaults, and constraints with the source code and checked that the English and Chinese pages describe the same behavior.
