Updated the four stale E2E map assertions (DorisIT and DorisMultiReadIT), added a 39-digit explanation comment next to DORIS_LARGEINT_PRECISION, and updated Doris.md source mappings + incompatible-changes.md. Re: the Spark 38-digit ceiling — added a note on the PR description; Spark currently rejects precision > 38 so a Doris LARGEINT column in a Spark job will error.
