URL: https://github.com/apache/seatunnel/pull/12759

   ## Summary

Doris `LARGEINT` is a signed 128-bit integer and needs 39 decimal digits.
The connector previously exposed it as `DECIMAL(20, 0)`, which caused
downstream sinks that rely on the source schema to narrow values.

This change uses `DECIMAL(39, 0)` for scalar and array values, updates
nested map types through the scalar converter, and preserves Doris `LARGEINT`
declarations when schemas are written back to Doris.

   ## Tests

Added converter coverage for scalar, array, and map precision, plus
round-trip coverage for Doris arrays and maps. Added a Doris-to-MySQL E2E case
that checks auto-created precision and the exact positive and negative signed
128-bit extrema.

The Doris converter suites pass (76 tests), and Spotless passes. The E2E
module could not be compiled in this environment: its reactor build fails in
`seatunnel-config-shade` on missing symbols, and standalone compilation lacks
the unpublished snapshot dependencies.

   Fixes #12753
