I used to go up to Baltimore each Labor day weekend for the Indy Car races. Hot.. I took a small 120v window unit and built a platform for the foredeck to mount it over the hatch with a couple of side pieces (and a little duct tape). Stuffed enough air in there to keep the cabin cool. As it came apart, it was easier to store in the lazerette.

So far, I've found a 5K btu Frigidaire unit on both Amazon and Lowe's, and also a 12volt DC unit [but I think this is one of those evaporative coolers that requires a water supply and it's very pricey at nearly $300].
