Danny, I don't have a C&C anymore (I know, I was made to walk the plank a few times not to mention being dragged around the keel), but my C270 has a double spreader mast and I demast (and step) myself. You need two and a half people to do that (the half is operating the crane). I rig a bridle (above the lower spreaders and around the mast and down to the mast gooseneck fitting (you want it to be tied to something solid)). The crane hook grabs the bridle and pulls the mast up. When you lower it, make sure that the hook does not ride down the bridle (or the top of the mast would drop on the deck). If you do it slowly enough and have someone controlling the hook, there is no issue.
I do it now for three years running and before I helped other members with larger boats (e.g. a 84 Hunter 34 with a huge mast (about 300 lb)). It only sounds complicated. I would suggest that the first time around have someone knowledgeable helping you. And have a few extra helping hands. I guess we are lucky here, because we have free (well, included in the membership fee) access to the masting crane (actually two cranes). My guess is that at least 50% of the members demast and step the masts by themselves. And we do it twice a year (it is hard to sail when the water is solid). If there is a crane that you could use, I would recommend doing it yourself.
