Paul - I won’t comment on living aboard a 36’ boat - that’s for you to decide.
My wife & I lived aboard for 7 years. For refrigeration we only used the built in box for soda/beer and fresh produce. Any 12V system is fine for that application and you don’t need a terribly big box. We then bought one of the coolers with a compressor built in to use as the freezer and kept it in the aft cabin.
