I really can't say you shouldn't do just as the instructor said. Like most things in sailing there is more than one way to be successful. I like my way because it doesn't involve turning across the waves. and it keeps the deck fairly dry.
One of the things I love about sailing is that we are all still learning; that's one of the things that makes it such an entertaining and life-long sport.
