I also pull the water pump impeller and the zip lock it with the key.
I pull the speedo (it's hard wired so can't be pulled too far out of the bilge) and insert the plug before haulout. I found a small tupperware container to fit in the bilge to hold the speedo, the depth sounder plug and a tube of vaseline used to lube the O-rings. The plug is used actually 90% of the time. I only use the speedo when actually sailing. It's so easy to change, I prefer to avoid any algae or growth, or damage to the impellor when the sling catches the hull.
Further anal winterizing
After the boat is blocked up level and plumb, I remove the speedo plug and use that hole to run an entension cord and a squeeze bulb and hose assembly I use to pump the bilge whenever I check the boat during the winter. Don't have a garboard drain. The squeeze bulb usually establishes a siphon after three squeezes and it runs for minutes if there has been a good rain before. If I visit the boat during snow or ice conditions, I don't climb aboard, but simply connect my plug hanging out of the hull to 120v power, listen for the radio inside to confirm power to my charger, and squeeze the bulb a few times to pump it as dry as possible. Then I go somewhere for lunch or take a drive for a few hours and return to collect up my power cord, and go home. I don't believe in keeping power connected while I'm away. I can provide a picture if this sounds too confusing?

Always pull and put my old impeller in a ziploc, attached to the engine key (along with the knotmeter paddlewheel I pull as a worst case drain), so I remember to install each before launch. That was a good idea from a lister some years ago. That said, I almost always use a new impeller.
