I have heard of some who will have a strong pad-eye mounted in the anchor locker; then they use some small stuff to tie the bitter end to the pad-eye. If you ever need to let the anchor go, a quick slice with a sharp knife and the small stuff will let go. Otherwise, it's enough under most conditions to keep the bitter end from accidentally going overboard.
