If I were to do it again, I'd do *both* epoxy sealer and paint. Crazy,
but...
I sealed the underside of my sole with penetrating epoxy, and used a
lot. I mean a lot. I brushed it on and brushed it in with multiple
coats -- in one day, so it would keep soaking in while thin -- and
didn't stop until it started to pool up because the wood wouldn't take
any more.
Ten years later, I have two problem areas. One is the forward edge of a
sole panel, where water has penetrated. That was because I spent a year
repowering the boat, and with the engine out it didn't sit on its lines
and water collected in places where water would normally never sit.
The other problem area is in front of the head, due to taking lots of
showers. I don't know why, but *I* can take a good shower with the door
*open* with only a few drops hitting the main cabin, but other folks
take a shower with the head door closed and seem to manage to flood the
boat. <sigh> The the finish and possibly the veneer is lifting along
that edge for a couple of inches.
So it might depend on how you plan to use the boat and how long you plan
to keep it.

Joel,
I'd use epoxy but the crabbers in my area all seem to like Duralux paint.
