Insofar as raid on usb I could not say as I've never tried it. But as you say speed for boot/root is not a factor for a server box. IO on your storage array is. Despite the use of usb it still boots pretty quick as it has a minimal Debian build. If you decide to try it feel free to contact me if you need a hand.
