There is not much installed by default, but you can add whatever you
want.  It is all just an apt-get (or aptitude install) away just like
debian.  There is noting impoverished at all about Ubuntu.  My Ubuntu
installs are crammed full of software (multiple editors, compilers,
DBs, vmware *and* virtualbox, my entire audio stack, you get the idea.

Having said that, I am big fan of sticking with what works.  If you
have a workflow that you are comfortable with, I would stick with it.
Even with the recent attempts by Ubuntu to introduce a new workspace
paradigm, I have it set the way I like (currently based around KDE
4.7, but I have GNOME, Unity, and several other DMs installed as
well).

The really big advantage with Ubuntu is the driver support.  They take
a more practical approach to things like binary firmware and
proprietary drivers.  I put Debian on my laptop and then spent the
weekend swearing (Ubuntu worked out of the box, so I was surprised).
