We have been loading Edubuntu because of it's educational bent. If the machines are too slow for that, I have been playing with Damn Small Linux but that would likely work for older kids only.
Basically, we salvage old hardware, load Linux and Open Source software on it and give it back to the community (at no cost of course). In return, we get an opportunity to let people know that Linux and Open Source exists and get to go to events like Climb for Wilderness and spread the word.
