Just wanted to report (for anyone searching for this info later) that this command did the job and properly logged the results. The only thing that didn't act the way I anticipated was the --scan-mail=no directive which I thought would make clamscan skip existing mail in the users mailboxes. Instead all the mail from hundreds of IMAP mailboxes was scanned and all spam and malware containing emails were duly logged.
