If you run freshclam as a daemon you are obliged to monitor and restart it should it die. It is needed for milliseconds each hour or what ever your configuration is set for. If it runs out of cron it runs for just milli- seconds - other wise it is in the proc table, uses memory, etc. And as a daemon it is something of a bad neighbor. Running it from cron allows you to include simple randomizing so it doesn't hit the server on the hour in lockstep with hundreds of other systems. And even if you run at some other minute after the hour you are still in lockstep with others who have selected that minute.
