I tried CHIRP on the FT-7800R with no problems and nothing broke but I can't use CHIRP because it doesn't support split tone mode and the developers aren't interested in adding it.
Years ago when I bought the radios I bought FTB7800 programming software from G4HFQ https://www.g4hfq.co.uk. Its cheap fully supports everything in the radio unlike CHIRP.
