I've always been allowed to do my own when asked. Their standard max
seems to be 600dpi raw tiff. But, you are correct - if THEY do it, you
get one of a couple preset functions - and usually pdf or jpg.

I once asked if a oversized image could be scanned at a high quality scan rate
of my choice and was told no, it would be scanned at a preset default.
Often times it’s the lowest denominator, unless you can do use a walk up
scanner and make all adjustments yourself.
