Yes this will work..
We hook up Cisco and non Cisco VoIP phones to a wide variety of
switches, Cisco, Foundry (Brocade), Extreme, etc.

Correct. CDP will be used only to detect the settings on the switch,
but you can hardcode these on the phones. I'm not 100% sure, but I
*think* you can even use LLDP on some of them.
