Well I did my lab about two years ago.

In there is some Core2Duo with 4GB RAM.  I was able to do a full
IPExpert topology including the BB and "Switch" routers.

In short, any Core i7 you find will be sufficient.  Having said that I
used Linux.  If you use Windows it might work.  I think Tyson wrote a
blog somewhere on how to do it.  Try looking through that.
