Apple Walnut Coffee Cake
 

 
Yield: Serves 16.

 
  a.. 3 eggs, beaten 
  b.. 1 cup oil 
  c.. 2 cups sugar 
  d.. 1 tablespoon vanilla extract 
  e.. 3 cups all-purpose flour 
  f.. 1 teaspoon salt 
  g.. 1/2 teaspoon baking powder 
  h.. 1 teaspoon baking soda 
  i.. 3/4 teaspoon nutmeg 
  j.. 1 tablespoon cinnamon 
  k.. 2 cups apples, peeled, cored and chopped 
  l.. 1 cup chopped walnuts 
  m.. 1 cup powdered sugar 
  n.. 1 1/2 teaspoon milk 
  o.. 1/2 teaspoon vanilla 
Preparation
  1.. In a bowl, combine all ingredients except apple and nuts; mix well. Stir 
in apple and nuts; pour into greased and floured Bundt® pan. Bake at 300 
degrees for 45 minutes. Increase heat to 325 degrees and bake an additional 20 
minutes. Cool on a wire rack for 20 minutes; turn out onto a serving plate. In 
a bowl, whisk together powdered sugar, milk and vanilla; drizzle over cake 
before serving.
