AUNT EDDIE'S FRESH APPLE POUND CAKE
*1 1/3 cups . oils * *2 cups sugar * *3 eggs * *3 cups sifted flour * *1 teaspoon salt * *1 teaspoon soda (baking) * *1 teaspoon vanilla * *1 teaspoon cinnamon * *4 cups apples , chopped in sm. pieces * *1 cup chopped pecans (pronounced pea-kans as they're called in georgia!) * ------------------------------------------------------------------------ Preheat oven to 325 degrees. Combine oil, sugar and eggs in a mixing bowl. Beat for 3 minutes at medium speed. Add flour, salt, cinnamon, soda and vanilla. Beat until well blended. Fold in apple pieces and pecans.
