EASTER CAKE
1 c. graham cracker crumbs
1/2 c. packed brown sugar
1/2 c. chopped pecans
1/2 c. margarine, melted
1 can vanilla frosting
1 c. whipped topping
3 tbsp. grated orange peel
1 pkg. yellow cake mix
1/2 c. orange juice
1/2 c. water
3 eggs
1/3 c. oil
2 tbsp. grated orange peel
Heat oven to 350 degrees. Grease and flour two 9-inch pans. In small bowl,
combine graham cracker crumbs, brown sugar, pecans, and melted margarine. Mix
together until crumbly and press half of mixture in each pan. In large bowl,
blend cake mix, juice, water, eggs, oil, and peel until moist. Beat 2 minutes
at highest speed. Pour batter over crunch layer. Bake at 350 degrees for
30-35 minutes. Cool 10 minutes exactly and remove from pan. Cool completely.
Mix frosting, topping and peel and frost cake. You can decorate for Easter.
Store in refrigerator.
