* Ingredients

  * 180g butter, chopped, softened
  * 2/3 cup caster sugar
  * 1 egg, at room temperature
  * 2 cups plain flour, sifted
  * 1 teaspoon baking powder
  * 1 cup chopped dates or mixed dried fruit
  * 1 cup cornflakes, crushed


  * Method

 1. Step 1

    Preheat oven to 180°C. Line 2 baking trays with baking paper.

 2. Step 2

    Using an electric mixer, cream butter and sugar until pale. Add egg
    and mix well. Fold in flour, baking powder and a pinch of salt.
    Gently stir in dates. Form teaspoonfuls of mixture into balls. Roll
    balls in cornflakes.

 3. Step 3

    Place pearl cakes on trays, allowing room for spreading. Bake for 20
    minutes, swapping the trays after 15 minutes, or until golden. Cool
    on wire racks. Serve.
