BLACKBERRY CAKE (OLD RECIPE)
5 eggs
2 c. sugar
1 1/2 c. butter
3 c. flour
2 tsp. each: soda, allspice,
cinnamon
2 c. blackberry jam, fresh
cooked or canned, mashed
well
2 Tbsp. cream
Cream butter and sugar well. Separate eggs; add yolks
to first mixture. Mix well; add the jam. Have flour, cream
(thick) and spices ready and add to first mixture. Add beaten
egg whites last; fold in. Cook in 3 round 9-inch pans; put
together with an old-fashioned cooked icing as the mother and
grandmother used to do. A cooked 8 minute marshmallow frosting
is good also, just newer.
Note: My wife's grandmother and great grandmother
made this cake. It is delicious.
