Orange Candy Cake
1 cup butter
2 cups sugar
3 1/2 cups flour
1/2 cup buttermilk
4 whole eggs
1 pound dates
1 pound orange candy slices
1 can angel flake coconut
1 cup pecans
1 cup black walnuts
1 teaspoon soda
1/2 teaspoon salt
2 teaspoons orange extract
Mix 1/2 cup of the flour with dates, orange slices, pecans and walnuts. Set
aside. Cream sugar and butter. Add eggs, one at a time.
Add 3 cups flour, soda, salt, milk and extract. Fold in the coconut and the
floured mixture. Bake in tube pan at 250 degrees for 1
hour then 200 degrees for 2-1/2 hours. You may also bake this in a 9 x 13-inch
pan at 250 degrees for 2-1/2 to 3 hours. Let set in
pan overnight.
Frost with Orange Candy Cake Frosting.
Orange Candy Cake Frosting
5 whole oranges -- chopped
1 cup sugar -- heaping
1 tablespoon butter
Boil until syrupy. Pour all but one cup over cake while cake is hot. Let stand
overnight. Next morning cook one cup until thicker
and frost cake.
You may also use: 1 cup fresh orange juice and 2 cup powdered sugar. Mix and
pour over hot cake in pan. Let stand overnight in pan.
