This is my all time favorite (non-chocolate) cake. My mother started baking 
this when I was in grade school. (I have children in middle and high school 
now) And I still LOVE this cake. It is the best.  It is also very simple, even 
chidren can make it without fear of it not turning out good.

You should use the butter for a better
flavor but many people like to use margarine.

Swedish Nut Cake

2 cups sugar
2 cups flour
2 eggs
½ tsp baking soda
1 20oz can crushed pineapple, including juice
½ cup chopped nuts
1 cup brown sugar
½ stick or margarine, room temperature
8 oz. pkg cream cheese, softened at room temperature
Nuts for topping (use a mixture of walnuts, almonds and pecans for crunch
topping)

Preheat oven to 350. Mix sugar, flour, eggs, soda, pineapple and juice in
mixing bowl. Add ½ cup nuts and pour into a 9 x 12 x 2 inch greased baking
pan. Bake for 40 minutes.

For frosting, mix brown sugar, margarine and cream cheese in a bowl. Spread
on cake while it is hot. Sprinkle with nuts.
