Chocolate Cherry Cupcakes
1 package about 18 ounces, devil's food cake mix with pudding
1 can 21 ounces cherry pie filling
2 eggs
1 teaspoon almond extract
1 cup chocolate chips
chocolate frosting, below
Preheat oven to 350 degrees. Line 24 muffin cups with paper liners.
Mix cake mix, pie filling, eggs and extract thoroughly in electric mixer. Fold
in the chocolate chips and spoon the batter into the muffin cups, filling about
3/4 of the way.
Bake for about 20 minutes or until toothpick comes out clean. Remove cakes to
rack.
Make frosting by melting 1 cup granulated sugar, 5 tablespoons butter and 1/3
cup of milk over medium high heat. Let the mixture boil until the sugar
dissolves and stir in 1 cup chocolate chips, stirring until mixture is smooth.
Spread on cooled cakes.
Makes 24 cupcakes.
