Hummingbird  Cake

  1 pkg yellow cake mix
  1 can 8oz crushed pineapple packed in juice undrained
  2 medium or 3 ripe bananas peeled and mashed
1/2 cup water
1/2 cup oil
  3 large eggs
  1 tsp very good vanilla
  1 tsp cinnamon (fresh is better)


cream cheese frosting


    1 8oz cream cheese @ room temp
    1 stick unsalted butter
3 3/4 cup powdered sugar sifted
    1 tsp very good vanilla



preheat oven to 350 F 

bake 30 to 35min


solid vegetable shortening 
for greasing cake pan and flour to dust pan


for cake

place cake mix and pineapple with its 
juice and mashed bananas and with water,
oil, eggs, vanilla, and cinnamon in mixing 
bowl and blend until smooth. 

The batter should look thick and the fruit 
well blended.

Pour cake mix into to 8inch cake pans and 
bake until done.

When cake layers  are cool frost with cream 
cheese frosting.


for frosting

make sure cream cheese and butter are room temp

place cream cheese and butter in a bowl and beat 
until creamy add vanilla and slowly add powder 
sugar until well combined and frost.
