LEMON~POPPYSEED MUFFINS 


4 cups flour

4 teaspoons baking powder

4 Eggs

2 cups sugar

1/2 teaspoon salt

1/3 cup poppy seeds

3 lemons

1 1/4 cup milk

2 ounces melted unsalted butter

Sift together the first four ingredients. 

Grate lemon rind into flour.

Squeeze lemons into a separate small bowl. 

Whisk together lemon juice, eggs,
milk and butter. 

Mix poppy seeds into dry ingredients. 

Pour liquid ingredients into the dry 
ingredients. 

Mix until just incorporated. 

Divide into 2 dozen greased muffin tins. 

Bake at 375 degrees F for 15 minutes or
until brown and spring back when touched.
