Safts�s - Sweden & Scandinavia
Safts�s is a very very simple sweet dessert sauce, frequently served with rice desserts, cheesecake, etc. You use a concentrated fruit syrup (saft), usually red berry juice (strawberry and raspberry are frequently used) and dilute it to taste with water (maybe 1 cup fruit syrup to 1 - 1 1/3 cups water). For this amount of sauce, use 1 1/2 tbsp potato starch (potato flour) as thickener. I heat the diluted syrup to boiling point, mix the potato starch with a couple of tablespoons of cold water, remove the pan from heat and stir the potato starch into the syrup (don�t stir in circles, rather use a back-and-forth motion, and don�t stir it more than you absolutely have to). Other recipes recommend that you put everything in the pan, then heat slowly to boiling point and boil the sauce for around 5 seconds (no more!). I haven�t tried this method.
