The following examples certainly works over here:
\version "2.11.45"
\relative{
c8 d e f \once \override Beam #'positions = #'(8 . 8 ) g a b c
}
I hope you realize that you have to do the \once \override just before
the starting
note of the beam. In general, a \once \override only applies to things
that are created
at the time of the next note.
Read about \revert in the manual, to find the answer to your other
question.
