To produce a pair of values in Scheme, you should write
\override TupletBracket #'connect-to-neighbor = #'(#f . #f)
(another option is the following:)
\override TupletBracket #'connect-to-neighbor = #(cons #f #f)

examples of pairs of values, that show this syntax.
