I think the short answer to this is that you cannot directly edit PDF files within Acrobat Standard 8. Adobe do appear to have announced this capability in Acrobat 9 however. See http://www.adobe.com/products/acrobat/solutions/detail/edit_pdf.html
A search on Google will reveal that there are some commercial options for direct PDF editing but I have noticed that they tend to disparage the performance of each others products which suggests the options are not straightforward in the third party market. I do not think there is a freeware option for directly editing pdf files yet but see http://www.labnol.org/software/download/openoffice-free-pdf-editor-without-a crobat/2187/ For a discussion of plans to include this within future versions of Open Office. Hopefully this option when it appears will be accessible for screen readers.
