I took a shortcut and reused the same package/binaries on the 5.11 machine as we had been running on 5.10. Since it appeared to work for everything I tried (including small restores) I thought that it was working properly. I think I was heading toward the same conclusion so will look at either rebuilding for 5.11 or sticking a director on a Linux machine and access the ZFS store via NFS (though I'm not sure what performance impact to expect from doing the latter). Thanks for the pointer, I'll let you know if using an alternate binary fixes this.
