In the process of restoring nearly 10,000,000 files from tape, I have

a way to turn this behavior off?

Yup. Look into the manual, chapter "The Messages Resource". You wull find the following message type:

"restored
The ls style listing generated for each file restored is sent to this message class."

So, just turn this off (like, int the default configuration, skipped is disabled IIRC) and everything should be ok.
